On the 4th May the largest exhibition of Italian food in the world starts. We will be attending the 5 day fair, looking out for interesting speciality foods amongst the thousands of products on view and seeing existing suppliers from all over Italy. It's hard work but always very interesting to see and taste such a vaste range under one roof. Any interesting finds will be assessed and mulled over by everyone in the office and may eventually find their way way onto future price lists! Update: 10-Apr-2006

As the weather warms up so sales of cheese rise. It's not quite summer yet but already we are seeing cheese sales creeping up after the post Christmas lull.
Guidetti Fine Foods work with the renowned Giovanni Fiori, one of Italy's best known affineurs, to supply cheeses from the length and breadth of Italy. Giovanni is also well respected for his great selection of cheeses from Piemonte, which is right on his doorstep, many from high pastures and made in increasingly small quantities.

The Domori chocolate range is a great addition to the traditional chocolate eggs and bunnies that most good food retailers stock at Easter.
Guidetti Fine Foods stock over 20 different types of Domori origin chocolate, which is world renowned as one of the highest quality products of its kind available in the market today. The Chateau range is from their own plantation, so it is truly a bean to bar product.

FIA014 Colomba Classica 100g. Easter falls in April this year so no need to panic just yet. As always we are doing the Colomba cake traditionally eaten at that time of the year in Italy.
This year we are doing things slightly differently - we are asking for pre-orders from customers. This is to ensure that we can get the stock in from Italy with plenty of time to get it to you. We will be contacting you by email later this month with details of the products available and lead times.

By all accounts trading was slow in October but when Christmas sales did get going it was a great success. Shelves that had been stacked high with seasonal stock suddenly emptied, a trading pattern that seems to be a recurring theme these past few years.
We had some great feedback about the new products like the Albertengo panettone range and the Mattei Hatbox full of frollini and cantucci (photo, right). They will no doubt be making an appearance again on our list.

We have added several new cheeses to our list, for instance the very underrated but delicious Grana Padano Trentino DOP. Not any old grana from the supermarket, this is made by producers high in the Val di Non area of mountainous Trentino. Unpasteurised, it is made using the winter milk and the same production methods used by parmesan makers.
Grana Padano Trentino has a slightly lighter flavour than parmesan but still with plenty of body and we think it's wonderful as a table cheese. For more information on this or any cheeses contact us on 020 7635 9800 and we'll tell you all about them.
We can now offer mixed cases of 12 oils to customers, giving you an opportunity to take a bigger range without extending your premises! Space is at a premium for many of our retail deli customers so contact us if you would like advice on best sellers or seasonal offers.

As the run up to Easter is a lot shorter than it was for Christmas please contact us for details of the Colomba or check the Easter category in our Products section for images.
A traditional easter cake, Colomba, which means 'dove' in English, is like a panettone but made with candied orange peel and no raisins. Sorelle Nurzia are providing our boxed 1kg offering (NUR020) and Tre Rossi the lovely hand wrapped 750g in pearly paper with various pastel coloured ribbons (ROS007).
As purveyors of 12 different types of Italian extra virgin we were interested to read that the USA Food and Drug Administration has authorised the following wording on bottles of extra virgin oil bottles: 'Eat two spoons (23 grammes) of olive oil per day' since this 'may reduce the risk of coronary damage' by replacing the saturated fats customarily consumed.
This is old news for the healthy folk of the Mediterranean, who have been using olive oil for centuries. But it's still interesting that the USA has taken the lead in actively promoting EVOO as a food that has a health benefit. Of course the benefit is only there if the oil is produced from good quality olives, harvested by hand so they go to the frantoio in the best condition and then cold pressed.

by Franco Boeri.We've added a new extra virgin oil to our range. Made made by Franco Boeri, it's available from February 2005.
We met up with Franco at Slow Food in Turin in October 2004 after hunting him down for his excellent pesto (which will also be available shortly). The taggiasca oil comes in a classic bottle with stopper.
Franco's pesto is made from locally grown basil and - of course - his own oil. Roi products may be new to our list but Franco is a well respected and well known oil maker, based near San Remo in the Valle Argentina.

Three varieties of
Fiasconaro panettone.It has been a busy year so far here at Guidetti and now the pressure is on to make this Christmas as successful as last year for all our customers.
Once again we have products from Sorelle Nurzia, Loisin and Tre Rossi in the panettone range, with the new addition of Fiasconaro, a small family owned bakery in Sicily that makes outstanding products in innovative flavours. Fiasconaro don't just make them for us but for Dolce and Gabbana (with their own designer packaging of course!), Ferrari and His Holiness, Pope John Paul II !
The secret of Fiasconaro panettone is raisins soaked in Marsala and Zibbibio wine until they are plump and juicy, and allowing the cake dough to rise slowly over 3 days.
The bienniale Salone del Gusto in Torino, Italy was a great show. Thousands of people flocked to the city for the 5 day food fest - including us - to taste food from all over Italy and indeed the world.
Whilst the Yak Milk cheese from Tibet wasn't really up our street the array of Italian cheeses was phenomenal, including our very own supplier Luigi Guffanti. Several products caught our eye and we will be doing some tastings of our own back here in London to see about taking things further with these suppliers who are really delivering produce of the highest quality to consumers.
The thing we most enjoyed tasting was the Lardo - pressed pork fat cured with herbs - which has a wonderful melting texture and is very aromatic. If you would like to purchase any Lardo just call us and we will get some in from one of our suppliers.
Highlights of Turin (which even without the Salone is a wonderful city for food) included the local hot chocolate drink called 'biccherin' (a mixture of cocoa powder, espresso coffee and cream) which is perfect for the winter mornings, and the Giandujotti chocolates for which Torino is famous.

about our products.Our new Price List is out! The front inside cover shows you the new products, which include some wonderful tuna from the Iasa family in Salento. We have been looking for some jarred tuna worth selling for a year now and this is it. The quality is superb and from tuna stocks that are sustainable. The types available in the range are Yellow Fin, White Tuna and the rich Ventresca or belly tuna from the Yellow Fin.
By popular demand we are now stocking Wild boar ragu and Chianina beef ragu. These are two excellent ragus made in Tuscany, the home of both these meats. Try them with the Sapori Di Casa egg pasta or Rustichella Garganelli all'uovo. Christmas is fast approaching so all our festive offerings are listed too.

All but the northernmost regions of Italy have now completed their olive harvests. Two of the main producing regions, Tuscany and Umbria, have had their worst harvests for years. A cold spell in April prevented flowering for some, whereas the unusually long and hot summer from May to October ensured that even producers not affected in April saw production fall by a third or so. On the bright side, the heat prevented olive fly infestation and so the quality of the 2003 harvest is high.
Liguria, Abruzzo, Sabina, Puglia and Calabria were largely unaffected whereas Sicily's hot summer affected some in the South but not the main producing area of Trapani.
Because of poor harvests in some regions, prices will increase across the board as Tuscan and Umbrian suppliers (the main exporters) bid-up prices of olives and oil from other regions - and even other countries - to meet demand for their product. Obtaining a guarantee of provenance for consumers has never been more important or difficult. DOP, Single Estate and small Frantoio oils are looking increasingly attractive, albeit at a price.
Generally, affected producers have increased prices by up to 15%. We have been obliged to similarly increase prices, but by a lesser amount since the Euro/Sterling exchange rate should allow us to absorb some of the increase.

Once again we'll be exhibiting at the prestigious Speciality and Fine Food Fairs, held on consecutive weekends in Leeds and London during September.
The Speciality and Fine Food Fairs are essential events for top end restaurants, retailers, caterers and wholesalers to sample and compare thousands of speciality foods from around the world.
The Northern Speciality and Fine Food Fair takes place at the Leeds Armouries in Leeds city centre on 1-2 September 2002. A week later the London Speciality and Fine Food Fair opens at the National Hall, Olympia from 8-10 September 2002.
In both cities we'll be exhibiting our extensive product range as well as our Christmas 2002 selection. At the London show visitors will be able to sample a freshly made espresso from our new Tosteria Del Corso coffee range.

Once again, we are proud to announce that we have won four awards in the Guild of Fine Food retailers 'Great Taste Awards' for 2002.
This year, over 2,550 entries from around the world were assembled at the Westminster Kingsway Catering College in London. The four days of judging involved over 150 experts, all drawn from food production, retailing, buying and the specialist media. Everything was blind tasted.
As a member of the Guild we entered a variety of products for tasting and the results were as follows:

It is good to see the Pandoro Sorelle Nurzia and Panettone Mandorlato winning awards two years in a row. Consistently high quality is what all our Italian suppliers work hard to achieve.
Our other two award winning products are new entrants to the competition and this takes our total number of awards over two years to 11 in total.
Last night we completed the move into our new warehouse and offices at Astbury Business Park in SE15. As you can imagine, it was a mammoth task, but everything went smoothly.
We don't expect any problems, but if there are any glitches during the first few days of August, please be patient. We'll soon have things sorted out and back to normal.
Thanks to our ever-expanding client list we've been planning to upgrade our warehouse and office facilities for some time. After ten years based near Borough Market we were starting to outgrow our premises. Now, with our move to Astbury Business Park completed, we'll be able to operate even more efficiently than before.
By starting with a 'blank sheet' at the new premises, we've been able to reorganise our entire warehouse operation to make it as efficient as possible.
We're very happy with our new home, and we hope you'll be happy too as the benefits of the new premises translate into even better service than before!

The new warehouse offers
improved access and efficient
use of space.Some of you may know already that we're moving to a new warehouse and office. Preparations started this week at the new warehouse, although as you can see from the pictures we're at the early stages.
After 10 years in Borough we're naturally sad to be leaving behind all the people and places we have got to know over the years. The new premises offer us much better access and a more efficient use of space, which will improve how we work on a day to day basis. We aren't abandoning Borough completely though - we'll continue to have our stall once a month at the now well established speciality food market.
We'll put the details of the new address and phone number on this site when we've moved the last pallet and box. Even if you call the old telephone number you'll automatically be told the new one, so getting in touch won't be a problem.
At the beginning of May the beautiful city of Parma in northern Italy was host to the 11th International CIBUS Food Exhibition. Once every two years 1,200 producers from all over Italy take part and we always visit.
During the 5 day event we walked the length and breadth of 7 enormous halls - a total, we were told, of 24km of aisles full of food! It was hard work but, as always, interesting to see new products from existing and new suppliers - so watch this space!

Italy is a nation of coffee enthusiasts - there are over 1,200 small, independent coffee roasters and blenders throughout Italy. Sicily We've just got back from the Mediagri 2002 exhibition in Palermo, the capital city. It's a great opportunity to taste well known and new products from a wide variety of local producers.
Ricotta Cheese is always in abundance at the exhibition - but it's not like the stuff we know in the plastic supermarket tubs! It's a fresh, milky, soft cheese, often used to make desserts like the famous 'Cassata Siciliana' and 'Cannoli'. These use a sweetened version of the cheese combined with candied fruit and pistachio - two more Sicilian specialities - to make really delicious desserts.
We like to keep up to date with developments in the Italian food industry, so we make regular trips to Italy and Sicily to check out new products.
Whilst in Sicily we visited Signora Maria Paola di Lorenzo, an oil maker in the province of Monreale, about an hour's drive outside Palermo.
The 'tenuta' Disisa, which gives its name to the oil, derives from the Arabic word 'aziz', which means 'spendid'. That's a word that can be applied to the estate and the oil it produces.
Disisa Extra Virgin Sicilian Olive Oil is a wonderful emerald colour with the sweet 'dolce' flavour typical of oils from this island. But, with an aroma of red tomatoes it just has that something extra to make it a truly excellent oil.

Salame Finocchiona Christmas Day lunch in Modena, where the Guidetti family is from, is quite unlike the typical turkey lunch in the UK. Here are some ideas if you want to do something different. You'll find all the delicious ingredients in our online catalogue:
Start with a plate of mixed salumi and antipasti - thinly sliced Felinetto, Finocchiona and San Daniele, served with Artichokes and Cracked olives.

sauceTagliatelle All'Uovo with a Porcini mushroom and cream sauce. If you don't make your own egg pasta then the Sapori Tagliatelle are the next best thing. Sprinkle with a generous helping of freshly grated organic Parmesan cheese and some ground black pepper.
Mostarda di Voghera After the 'primo piatto' of pasta comes the main course, Bollito Misto, which consists of topside of beef, a chicken and Veal tongue or cheek slowly cooked together in a broth. Slice the boiled meats and served with condiments like Salsa Verde or Mostarda di Voghera, Balsamic Onions and mashed potatoes and spinach.
Panettone Sorelle Nurzia Christmas meals are only complete with final sweet course - this one is delicious! Panettone Babbo Natale, or 'Panettone Father Christmas'. Get a slice of Panettone Sorelle Nurzia or Panettone Mandorlato, soak it in some expresso coffee, add a generous blob of whipped cream and a dash of brandy!

Panettone Mandorlato Christmas is coming... and we're already receiving lots of orders. We had a great response to our Christmas selection at the Speciality shows and our warehouse is filled with the delicious smell of freshly baked Panettone Mandorlato (photo, right) from our baker Tre Rossi. More panettone and pandoro are on the way from Sorelle Nurzia in L'Aquila and panforte and ricciarelli from Betti and Sinatti in Siena.
These producers get very busy in September and October so letting us know your initial orders is very important. Delays telling us might mean delays getting the goods to you. All the products are stock items but things sell out! So, don't wait so long that your customers go elsewhere. Place your order and let us know when you want delivery - we will hold it in our warehouse until you need it. Any queries, contact us asap!

Borough Market has gone from strength to strength over the last year. Each Saturday sees it packed with food enthusiasts and equally enthusiasic vendors of a wonderful array of food. Many stalls (including our own) encourage you to taste samples of their products. There's always a great atmosphere and you're unlikely to go home empty handed.
Borough Market is on the corner of Borough High Street and Southwark Street, close to the London Bridge Tube and Rail stations.
In 2 or 3 weeks the 2001 crop of Italian red chillis will be available. These fantastic hot chillis are grown in Puglia and dried in the searing heat. Not for the faint hearted, they add a wonderful kick to a myriad of recipes, like the classic 'Arrabbiata' sauce, or if you feel brave add extra chilli for an 'Arrabbiatissimo' sauce!
Pancake day is here again (Shrove Tuesday) and although they are not very Italian, here at Guidetti we love them, especially with a liberal sprinkling of sugar and lemon juice! We make our pancakes with Ferron Rice Flour, made from rice from the fields south of Verona. It makes a lovely light (and gluten free) pancake. Try this delicious batter recipe by Gabrielle Ferron.
We are constantly looking at new products to offer you in the coming months. Products that we found at the Slow Food exhibition at Turin in October are finally being tasted after the hectic few months that were Christmas.
This was our first but by no means last visit to Slow Food at Turin in October 2000. The quality and variety was fantastic, bursting at the seams with rarely seen things like 'L'aspargo violetto di Albenga' which is a purple asparagus and is as delicious as it looks. Other mouthwatering foods included mountain Lardo with a rosemary and salt crust - wonderful sliced thinly on warm crostini - and mountain honeys like Rhododendron.
Rhododendron Honey is back in stock after an absence of 3 years. Why? This honey comes from the beautiful plant of the same name and for the last few years the climate in the Piemonte hills has not been warm enough during July to tempt the honey bees up the hills to 2,000 ft, which is where the Rhododendron flourish. As a result there was no honey. Last year, thankfully, that was not the case so it is back on our product list.
Christmas is not far away now, especially if you are a retailer. Here at Guidetti Fine Foods we have already placed the first round of Christmas orders with our Italian suppliers. Last year many people were disappointed because they did not order early enough, so don't get caught out, make sure you have your supply of Panettone and Ricciarelli biscuits in time.

Next month at the Borough Market will be a 3 day extravaganza to mark the beginning of the apple harvest. Alongside the regular stallholders who make the market a food paradise every week, there will be apples in abundance, a wide variety of apple products, growers and even trees. Theatre and music - for children and adults alike - from the Lion's part Theatre Company will also feature over the weekend.
Come and visit us and the rest of the market on the following days: Friday 20th October 12noon - 6pm, Saturday 21st October 9am - 4pm and Sunday 22nd October 9am - 2pm.
