Buffalo Mozzarella
Buffalo have been raised in southern Italy since 1300. Strong and resilient animals, they can produce abundant milk even in winter months. Our buffalo mozzarella is made in Campania with whole buffalo milk and is acidulated with natural bacterial culture (la cizza). Mozzarella is named after the action the cheese maker uses to cut off (mozzare) the cheese when he makes it into the smaller pieces. This thin skinned cheese with a delicious soft centre and a rich fresh grass flavour is best left at room temperature before serving.
