Our range comes mainly and directly from the 'storehouses' of Luigi Guffanti in Arona (northern Italy) - probably the most reputable Italian ‘selezionatore’ (‘affineur’, in French). The cheeses are selected, stored, maintained and matured in ideal conditions (far better than we at Guidetti could ever achieve in the UK) and delivered to us only when they are absolutely ready for the market.
In addition to those listed below, about 200 other Italian cheeses can be ordered from Guidetti on a 7 day pre-order basis. We are happy to tell you about any Italian cheese you may be interested in, or advise on seasonal specialties for your cheese board.
Many of the listed cheeses are made with unpasteurised milk, because unpasteurised cheeses retain all the natural goodness of the fresh milk. This guarantees them a more distinctive flavour, and allows them to improve and develop over time. They also cost more than their pasteurised equivalents because very strict hygiene rules must be observed from milking onwards to eliminate any risk of pathogen contamination.
