Piadina

A traditional flat bread from the Marche and Romagna regions of Italy, on the Adriatic coast. The Piadina - in the shape of a pancake about 9 inches in diameter- is heated quickly in a dry pan and then filled with salad leaves, tomatoes, cheese and/or ham. Traditionally it is folded over and eaten like a wrap while still fairly hot. The traditional Piadina is made with lard but ours are made with vegetable fat so it is suitable for vegetarians.
