The caper is a typical plant of the Mediterranean area, especially of Sicily (Eolie Isles) where the very hot, sunny weather helps the caper bush to grow.

The beautiful flowers of the caper bush (locally called Lipari orchids) are hard to spot unless you are one of the many hand pickers that collect these tiny buds. The most prized capers are the tiny occhiolino capers, which we import preserved in sea salt. Also available preserved in wine vinegar. Rinse salt off thoroughly before use.
