Colomba means 'dove' and the cake is baked in the shape of the dove of peace. The pastry mix is similar to panettone but with one big difference - the fruit. Colomba does not contain any raisins, just zesty candied orange peel. The top is sprinkled with Mandorle D'Avola almonds, and the Colomba is hand wrapped.

All Fiasconaro's Colomba is produced using natural yeast and is slow risen, making its texture really light.
