By Pavarotti near Modena a specialist in cooked  hams.  Porchetta is a old rural tradition of cooking a small pig on a spit flavoured  with herbs and garlic- its origins are in the region of Rome, Latium-  then rolled and sliced up while still warm or eaten cold  Another Italian version of doing roast pork. Very appetising  and great for antipasti platters or in hot ciabatta. The cut we sell  is vacuum packed in strong foil and ready to slice.
